Creamy Butternut Squash & Apple Soup
Creamy Butternut Squash & Apple Soup is a delicious and comforting autumnal soup that combines the sweetness of butternut squash and apples with savory seasonings. This soup typically involves roasting or simmering butternut squash and apples until they become tender, then pureeing them into a smooth, velvety consistency. - 1 Large onion sweet, chopped
- 3 cups cauliflower chopped
- 2 cups butternut squash peeled, seeded, and cubed
- 1 Apple green, peeled and chopped
- 1 tbs olive oil
- 1/2 cup cashews raw
- 8 cups vegetable broth low sodium (or more)
- salt to taste
In a large soup pot, sauté onion gently in olive oil until softened and fragrant.
Add cauliflower, squash, apple, cashews, and broth. Bring to a boil then reduce heat and simmer until cauliflower is soft - about 15-20 minutes. Add more broth if necessary to keep cauliflower and squash covered.
Remove from heat and let stand until cool enough to purée.
Purée soup in batches in a blender - be sure the cover of the blender is on tight as steam from soup could pop the lid (we like to cover it with a towel just to be sure!)
Season with salt to taste.
