Mitali’s Gluten-free And Zero Sugar Celebration Cake

Mitali’s Gluten-Free & Zero Sugar Celebration Cake is a soft, moist, and naturally sweetened dessert made with wholesome ingredients like dates, applesauce, and almond flour.

Ingredients
  

  • 1/2 cup pitted Medjool dates (approx. 5-6 dates)
  • 1/4 cup hot water (for soaking)
  • 1 cup unsweetened applesauce
  • 3 large eggs
  • 1 teaspoon vanilla essence
  • 1/2 cup Lakanto monk fruit sweetener
  • 1 1/2 cups almond flour
  • 1/2 cup oat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup Lily’s white chocolate chips
  • Avocado oil spray (for the pan)

Instructions
 

  • PREP THE DATES: Place pitted dates in a small bowl with 1/4 cup hot water. Let them soak for 10 minutes until soft. Blend or mash with a fork into a smooth paste.
  • PREHEAT: Set your oven to 350°F (175°C). Spray an 8x8 inch baking dish or 9-inch round pan generously with avocado oil spray.
  • MIX WET INGREDIENTS: In a large bowl, whisk the eggs, applesauce, vanilla, and the prepared date paste until well combined.
  • ADD SWEETENER: Stir in the Lakanto monk fruit sweetener.
  • ADD DRY INGREDIENTS: Fold in the almond flour, oat flour, and baking powder. Mix until the batter is smooth and no dry clumps remain.
  • FOLD IN CHIPS: Gently stir in the Lily's white chocolate chips.
  • BAKE: Pour the batter into the prepared dish. Bake for 35–40 minutes. Test the center with a toothpick; it should come out clean.
  • COOL: Allow the cake to cool in the pan for at least 20 minutes before slicing. This helps the gluten-free structure set properly.
